Fall Camping Recipe: Hawaiian Meatballs

When the skies are grey and cloudy, what better dinner than a meal that’s as fun and flavorful as it is colorful? Our camping recipe for Hawaiian Meatballs is a family favorite – and it’s so easy to make in your new or used RV. Check it out!

Hawaiian Meatballs

Ingredients:

  • 32oz frozen Italian style meatballs
  • 6-8 baby bell peppers
  • 1 15 oz can pineapple chunks in pineapple juice – drained, but keep the juice
  • ½ cup packed brown sugar
  • ½ cup rice vinegar
  • ¼ cup ketchup
  • 1 Tbs soy sauce
  • Additional pineapple juice to bring to 2 total cups
  • 1 Tbs corn starch

You’ll also need:

  • Slow cooker
  • Slow cooker liner for easy cleanup
  • Cutting board
  • Sharp knife
  • Saucepan
  • Measuring cups/spoons

Directions:

  • Line your slow cooker with a liner and add the meatballs.
  • Cut each baby bell pepper into chunks – 2 or 3 pieces per pepper. Add the pepper and pineapple chunks to the meatballs. Discard pepper stems.
  • In a saucepan: Combine brown sugar, rice vinegar, ketchup, and soy sauce, and 2 cups of pineapple juice. Whisk well.
  • Heat the sauce mixture over medium heat, whisking until smooth and the brown sugar is dissolved. Add corn starch, continue to whisk, and heat until slightly thickened. Pour over the meatballs, peppers, and pineapple and place the lid on the slow cooker.
  • Cook on low heat for 4-6 hours.

We love spooning this camping recipe for Hawaiian Meatballs over white Jasmine rice. It’s the perfect warm food on a chili day!
