Sweet & Tangy Hawaiian Meatballs
Ingredients
- 32oz frozen Italian style meatballs
- 6-8 baby bell peppers
- 1 15 oz can pineapple chunks in pineapple juice – drained but save the juice!
- ½ cup packed brown sugar
- ½ cup rice vinegar
- ¼ cup ketchup
- 1 Tbs soy sauce
- Additional pineapple juice to bring to 2 total cups
- 1 Tbs corn starch
White jasmine rice for serving
Garlicky Green Beans (recipe follows)
Directions
- Place a slow cooker liner in your slow cooker. Add the meatballs.
- Cut each baby bell pepper into 2 or three pieces, discarding stems. Add pepper chunks and pineapple chunks to the meatballs.
- In a saucepan, combine brown sugar, rice vinegar, ketchup, and soy sauce. Using the reserved pineapple juice from the can, add enough additional pineapple juice to bring to 2 full cups. Add to brown sugar mixture and whisk well.
- Heat sauce mixture over medium heat, whisking until the brown sugar dissolves. Add the corn starch and heat until slightly thickened. Pour over the meatballs, peppers, and pineapple.
- Cook on low heat for 4-6 hours.
- 20 minutes before serving, prepare white Jasmine rice according to package directions.
Bonus recipe: Garlicky Green Beans
- In a skillet, drizzle 2 Tbs cooking oil and add 16 oz fresh green beans. Sprinkle with sea salt to taste and 1 tsp of minced garlic. Sauté until bright green and crisp-tender.
